To make these stuffed peppers, you’ll need some basic ingredients such as ground pork, rice, onions, garlic, and tomato paste. You’ll also need some spices such as paprika, salt, and black pepper. The recipe starts by making the tomato sauce – simply heat some lard in a saucepan and add flour to make a roux. Pour in some hot bone broth and stir in the tomato paste and salt. Add a celery leaf and chopped onion to the sauce and let it cook for about half an hour.
While the sauce is cooking, you can prepare the filling for the peppers. Cook the rice halfway according to package instructions and let it cool. Fry some chopped onion in lard until softened. In a large mixing bowl, combine the ground pork with the cooked onion, cooled rice, eggs, minced garlic, salt and pepper.
Prepare the peppers for stuffing by washing them and removing their seeds. Fill them with the ground pork mixture – make sure to fill them without any gaps so that they don’t collapse while cooking. Be careful not to overfill them as they may burst.
Once your tomato sauce is ready and your peppers are stuffed, place the peppers in the hot tomato sauce and cook until done. Serve hot and enjoy!

- 35.3 oz of ground pork
- 20 medium peppers
- 1.8 oz of lard
- 1 large onion (chopped)
- 4 cloves of garlic (minced)
- 2 teaspoons of salt
- 0.2 oz of black pepper
- 3 eggs
- 8.8 oz of rice.
Instructions
- Start by making the tomato sauce: Heat the lard in a saucepan over medium heat. Once hot, add the flour and cook until it turns a bread crumb color.
- Pour in the hot bone broth and stir in the tomato paste and salt.
- Add the celery leaf and chopped onion to the sauce and let it cook for about half an hour.
- While the sauce is cooking, prepare the stuffed peppers: Cook the rice halfway according to package instructions and let it cool.
- In another saucepan, fry the chopped onion in lard until softened.
