Bolo de laranja is the cake by which Portuguese home bakers are quietly judged: intensely orange, impossibly moist, and served without frosting because it needs none. Every family has a version; every version claims superiority.
The whole secret is quantity of orange — zest and juice both, and never from a bottle. Two large oranges give this cake its perfume and its tenderness.
It lives happily at tea time, ends family lunches with dignity, and improves on day two, when the citrus has fully moved in. A dusting of powdered sugar or a thin orange glaze is all the decoration tradition permits.
Portuguese Orange Cake Recipe

Ingredients
- 1½ cups granulated sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- Pinch of salt
- 4 large eggs
- ½ cup unsalted butter, melted and cooled
- 2 large oranges, zested and juiced (about ¾ cup juice)
- 1 teaspoon vanilla extract
- Powdered sugar, for garnish
Instructions
- Preheat the oven to 350°F. Grease and flour an 8-inch round pan (or line with parchment).
- Whisk the flour, baking powder and salt.
- Beat the eggs and sugar until light and fluffy, 3 to 4 minutes — this is the cake’s structure, so do not rush it.
- Beat in the melted butter gradually, then the orange zest, juice and vanilla.
- Fold in the dry ingredients just until combined.
- Pour into the pan and bake 35 to 40 minutes, until a toothpick comes out clean.
- Cool 10 minutes in the pan, then completely on a rack.
- Dust with powdered sugar, or glaze with powdered sugar loosened with orange juice.

- The famous Algarve version is baked in a bundt pan and soaked in orange syrup — an excellent escalation.
- Room-temperature eggs whip fluffier; it matters here.
