Queijadas de nata are the quieter cousins of the world-famous pastéis de nata: same buttery pastry instincts, but with a smooth, cornstarch-set cream filling rather than the blistered custard — gentler, homier, and dangerously easy to eat in pairs.

They belong to Portugal’s vast queijada family (our queijadas de Sintra recipe covers another branch of the dynasty), and they are everyday pastry-case fixtures across the country, made for the espresso beside them.

This version is fully home-kitchen friendly: a simple butter pastry pressed into muffin tins and a stovetop cream that comes together in ten minutes. No blowtorch, no drama, all comfort.

Queijadas de Nata Recipe

What you need

Ingredients

  • For the pastry:
  • 1½ cups all-purpose flour
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • 3 tablespoons cold water (or as needed)
  • For the filling:
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 tablespoons cornstarch
  • 1 cup whole milk
  • Zest of 1 lemon (optional)
Cook along

Instructions

  1. Mix the flour and salt, rub in the cold butter until crumbly, and add cold water a tablespoon at a time until the dough holds. Wrap and chill 30 minutes.
  2. Whisk the cream, sugar, yolks and vanilla in a saucepan, then stir in the cornstarch and milk until smooth.
  3. Cook over medium heat, stirring constantly, until slightly thickened, 5 to 7 minutes. Off the heat, add the lemon zest if using, and let the filling cool.
  4. Preheat the oven to 375°F. Roll the pastry to ⅛ inch, cut circles to fit your tart pans or muffin tin, and press them in.
  5. Fill each shell with the cooled custard, leaving a little headroom.
  6. Bake 18 to 22 minutes, until the filling is golden and the pastry crisp.
  7. Cool 5 minutes in the pan, then finish on a wire rack. Serve at room temperature, with powdered sugar if you like.
